I would need a google spreadsheet in which there would be two columns,

one with a description of the task to be done and the other with the ability for a specific person to sign up for that task.

It would be important that one person could sign up for each task and be able to unsubscribe from it. However, another person would not be able to overwrite their data unless the previous person unsubscribed from that item.
