Creation of two websites with online stores on two domains

I would like to create two new stores based on the existing ones which are quite outdated.

- Assortment and content are to be transferred.

- The new stores or, if there is an idea, modernization of existing stores, replacement of plugins, etc. are involved.

I care about :
