Refresh layout + transfer content

I want to refresh the website. The website is ultimately to serve as a place to share knowledge and value for customers. It is to be available in two languages.

Stage 1 ###

I have hosting on JDM.co.uk. I want to create a new clean site, upload the currently purchased layouts and plugins. Configure the system from scratch and arrange some plugins, etc. Maybe refresh the layout and color scheme a bit. This is where I'd probably want to talk through a UX/UI refresh. There are a few things I want to go over.

### Stage 2 ###

Move content from the "old" site to the new one. Gradually. Polish first. There are several home pages + quite a few pages from the blog. The layout of links is to stay the same.

Pages + subpages are currently 35.

Blog entries - 53

The whole thing currently consists of 2 pillar pages. I want to have 3 eventually.

In my opinion, time and carving will be needed. Maybe you can do copy paste from elementor, or maybe you need to make block templates and section sticky text there.
